Recipe: Sweet Corn Succotash
Summary: Summer Succotash (Sweet Corn, Lima Beans and Tomato)
Ingredients
- 2 Tbsp Olive Oil
- 1 Tbsp Butter
- 1 mdm Onion, chopped (approx 1 cp)
- 1 lrg clove Garlic, minced
- 3 cps Sweet Corn (cut from 6 ears of corn)
- 2 cps Lima Beans, thawed (10 oz frozen)
- 2 cp Tomatoes, chopped (approx 1 lb)
- 1½ tsp Salt, to taste
- 1½ tsp Pepper, to taste
- 2 Tbsp Parsley, finely chopped
Instructions
- Heat olive oil in large skillet over medium heat.
- Add butter and onion to pan. Sauté until soft and translucent (approx 4 mins).
- Add garlic, stirring until garlic becomes fragrant (approx 1min).
- Add corn and lima beans to the mix. Lower heat to medium-low and simmer for 8 mins.
- Add tomatoes and continue to cook just until tomatoes are warmed through. Season mix to taste with salt, pepper and herbs.
- Remove from heat and serve hot or room temperature for delicious side dish.

Yield: Serves 4-6
Variations
Suggestions: Use any herb you like for this dish. Try adding spices like Cumin or Coriander for a bit of earthiness. Enjoy!
